Cold brewing allows the tea to steep slowly, resulting in a smoother and less bitter taste. Here's a simple guide on how to make a healthy cold brew tea:

Ingredients:

Loose-leaf tea or tea bags of your choice (green tea, black tea, herbal tea, etc.)

Filtered water (or any drinking water)

Optional: Fresh fruits, herbs, or spices for added flavour (e.g., lemon slices, mint leaves, cinnamon sticks)

Instructions:

Choose your tea: Start by selecting your preferred type of tea. You can use black, green, white, oolong, or herbal teas. Make sure to use good-quality loose-leaf tea or tea bags without any additives or artificial flavours.

2. Get a container: Take a clean glass pitcher or a large glass bottle with a lid. Glass works best as it doesn't retain odors or flavours that might affect the taste of the tea.

3. Add tea and water: Place the tea leaves or tea bags into the container. Use about 1 tablespoon of loose tea or 1 tea bag per 8 ounces (about 240 ml) of water. You can adjust this ratio based on your taste preferences. Pour cold, filtered water over the tea.

4. Optional flavourings: If you want to add extra flavours, you can include fresh fruits like lemon slices, orange wedges, or berries, along with herbs like mint leaves or spices like cinnamon sticks. These can infuse their flavours into the tea as it steeps.

5. Stir and cover: Gently stir the mixture to ensure all the tea leaves or tea bags are immersed in the water. Put the lid on the container to prevent any contaminants from getting in and to retain the tea's flavour.

6. Cold steeping: Place the container in the refrigerator and let the tea steep for at least 4 to 12 hours. Cold brewing takes longer than hot brewing, but it results in a smoother, less to no astringent flavour.

7. Strain and serve: After the steeping time is up, remove the tea leaves or tea bags, as well as any added fruits or herbs. If you used loose tea, you can strain the mixture through a fine-mesh sieve. Serve the cold brew tea over ice and enjoy!

Tips:

For a more concentrated tea, you can increase the steeping time or use a higher tea-to-water ratio.

Cold brew tea can be stored in the refrigerator for up to a few days, but for the best taste, it's recommended to consume it within 2-3 days.

By cold brewing your tea, you preserve more of its natural antioxidants and nutrients, making it a healthier choice compared to some sweetened or flavoured iced teas available commercially. Cold brew tea, whether made with loose leaves or tea bags, offers several potential health benefits:

Antioxidants: Tea is a rich source of antioxidants, such as catechins (found high level in green tea) and theaflavins (found in black tea). These antioxidants help combat free radicals in the body and may contribute to overall health and well-being.

Hydration: Cold brew tea is a great way to stay hydrated, especially during hot weather. Unlike some sugary beverages, cold brew tea is typically low in calories and doesn't contain added sugars or artificial sweeteners.

Reduced Caffeine Content: Cold brewing tea tends to extract less caffeine than hot brewing methods. While caffeine can have some health benefits, some people prefer to reduce their caffeine intake, and cold brew tea can be a suitable option in such cases.

Digestive Benefits: Certain herbal teas, such as peppermint or chamomile, have been traditionally used to aid digestion and soothe the stomach.

Calorie Control: Cold brew tea, without added sweeteners, is a low-calorie drink. This can be beneficial for individuals looking to manage their weight or reduce calorie intake.

No Added Preservatives or Additives: When you make cold brew tea at home using loose leaves, you have control over the ingredients. There are no added preservatives, artificial flavours, or additives, making it a more natural and wholesome choice.

However, it's essential to keep in mind that the health benefits of cold brew tea largely depend on the type of tea you choose and how you prepare it. For example:

Avoid adding excessive amounts of sweeteners or syrups, as this can add unnecessary calories and negate some of the health benefits.

Be mindful of the caffeine content if you are sensitive to caffeine or have certain health conditions that require caffeine restriction.

Some herbal teas may interact with certain medications or have specific contraindications, so it's advisable to check with a healthcare professional if you have any concerns.

As with any beverage, moderation is key. Enjoying cold brew tea as part of a balanced diet can be a flavourful and healthy addition to your daily routine.

Silver Needle - White Tea

The exquisite Silver Needle white tea, made from only the finest handpicked tea buds. These buds are plucked during the early spring season when they are cloaked in silvery-white down. The meticulous harvest process involves selecting only the youngest and most pristine buds, ensuring a tea of unparalleled purity and elegance.

What sets Jinggu’s Silver Needle apart from its counterparts in Fujian is its varietal origin. Many Jinggu Silver Needles come from the local Da Bai Cha tea cultivar or ancient tea trees. For me, it’s not just about the healthy drink—it’s a ritual, a quiet moment carved out of a busy day. The vibrant green of matcha, the frothiness of the milk, and the calming process of whisking all come together to create an experience that feels both grounding and indulgent.

Let me walk you through how I craft my delicious homemade matcha latte, the way I’ve grown to love it:

Tips for the Best Results

Always use good quality ceremonial-grade matcha for lattes; culinary-grade matcha is too bitter for this purpose. Authentic ceremonial-grade matcha is known for its natural umami and sweetness, which means you typically don’t need to add any sweetener. This natural sweetness comes from the high-quality, young tea leaves used to make ceremonial matcha. The leaves are shaded before harvest, which boosts the chlorophyll content and enhances the amino acids, particularly theanine, responsible for that smooth, slightly sweet flavour. Good quality matcha matters for both reasons, superior taste and better health benefits.

Sifting matcha powder plays a crucial role in creating a smoother, more enjoyable matcha latte.

Adjust the matcha-to-milk ratio according to your taste preference.

Frothing your milk well adds a luxurious texture that elevates the experience.

Experiment with milk alternatives like oat, almond or coconut milk to find your perfect pairing.

What You’ll Need

Before we begin, gather your ingredients and tools. Here’s what I use:

Matcha powder: Just 2 chashaku or 1.5 teaspoons of good-quality, ceremonial-grade matcha makes all the difference.

Hot water: About 150 ml at the perfect temperature—80℃.

Milk: 100 ml of your favourite kind. I personally use full-cream milk for its creaminess, but almond or oat milk work beautifully too.

Tools: A bamboo whisk (Chasen), a bowl, a small pot for warming milk, a milk frother, a kettle, a small strainer (optional), and my favourite mug.

Step-by-Step Process

1. Setting the Mood

Before I start, I like to take a moment to clear my space—both the counter and my mind. Brewing matcha feels more special when it’s done mindfully.

2. Sift the Matcha

Sifting the matcha into a bowl is a small step but an important one. It ensures a lump-free latte and creates a smooth, frothy drink. Watching the fine green powder collect is oddly satisfying—a tiny reminder of nature’s artistry.

3. Whisk the Matcha

Add about 10 ml of hot water to the bowl. Using a bamboo whisk to stir the powder with circular motion to create mud-like texture, this helps to dissolve the Matcha powder better.

Pour in the rest of 140 ml hot water. Whisk vigorously in a zig-zag motion, not circular, to create a creamy froth. Keep the wrist loose and use a quick, flicking motion to incorporate air into the matcha. This creates a frothy top layer. Whisk for 20-30 seconds until small, uniform bubbles form on the surface. Once frothy, slow down and glide the whisk across the surface to pop larger bubbles and smooth out the froth.

4. Heat the Milk

To create a cloud of foam, I use a barista-style frother machine that available at home (Left image). This machine will heat and froth the milk at the same time.

I also use a hand-held frother (Right image) while traveling, a great choice for convenience. Warm the milk on medium heat (around 60-70℃), then submerge the frother’s whisk just under the surface of the milk. Turn it on and gently move it up and down to introduce air.

5. Combine and Sweeten

Pour the milk over the whisked matcha base, letting the two layers blend into a lush, creamy green. I personally never add sweetener because matcha has a unique taste profile: umami-rich, and slightly bitter with subtle sweet undertones when high-quality powder is used. Sweeteners can mask these natural complexities, making the drink less authentic to traditional Japanese tea culture.

However, adding sweetener to your matcha latte is entirely a personal choice and depends on your taste preferences and what you’re looking for in the drink.

Options for Sweetening Matcha Latte

Natural Sweeteners: Honey, maple syrup, or agave nectar add subtle flavour notes.

Refined Sugar Alternatives: Coconut sugar or stevia provide sweetness without drastically altering the calorie count.

Flavoured Syrups: Vanilla, caramel, or lavender syrups can transform a traditional latte into a decadent treat.

6. A good quality matcha contains numerous health benefits in both physical and mental well-being, making it a holistic choice for daily wellness.

In my own life, I only have my eyes on authentic teas, including matcha. For me, sipping a good quality tea is more than taste; it’s about honouring the craftsmanship and the journey from leaf to cup, it’s a cornerstone of my daily routine. Each morning, I whisk a fresh bowl of matcha, savouring the earthy aroma and watching the vibrant green froth form. It’s a simple yet intentional ritual that sets the tone for my day, offering both clarity and calm.

What I love most is how matcha supports my well-being. The gentle caffeine boost helps me focus without the jitters, and knowing it’s packed with antioxidants makes every sip feel like a step toward a healthier me. It’s not just about the drink; it’s about the pause, the mindfulness, and the joy of indulging in something truly good for the body and soul.

If you’ve never tried incorporating high-quality matcha into your life, I can’t recommend it enough. Start small—maybe one cup a week—and let it become a moment just for you. Once you experience its rich flavour and the sense of balance it brings, you might just find it’s something you look forward to, too.

Why good quality of matcha matters?

The quality of matcha significantly impacts its health benefits because the production process, leaf selection, and overall purity determine the concentration of essential nutrients and bioactive compounds. Higher Levels of Antioxidants

Good quality matcha contains higher amounts of epigallocatechin gallate (EGCG), a powerful antioxidant. Antioxidants neutralize free radicals, reducing oxidative stress and lowering the risk of chronic diseases such as cancer, cardiovascular issues, and inflammation.

Impact of Poor Quality: Lower grade matcha often contains fewer catechins due to less shading during cultivation and subpar leaf quality.

2. It’s a sensory delight, a moment of calm and elegant, a gentle escape from the rush of the world. Every cup feels like a delicate embrace, reminding me to pause, breathe, and savour life’s little luxuries.

I remember the first time I discovered jasmine pearl tea. The tiny, hand-rolled pearls looked like treasures, their green and silvery hues promising something special. As the pearls unfurled in hot water, a mesmerizing dance began—graceful, deliberate, almost meditative. The air filled with the intoxicating scent of jasmine, a floral sweetness that felt like a whisper of spring.

Drinking it, I was struck by its complexity: a balance of fresh green tea with soft floral notes, neither overpowering the other. It was both invigorating and soothing. The tea is delicate and has elegant aroma with light sweet lingering, plus a hint of melon, felt like sunshine on a cool morning. Over time, it became my ritual—a moment of peace in the chaos.

Jasmine pearl tea connects me to a tradition rooted in the mountains of Fujian, China, where artisans painstakingly roll each pearl and infuse it with real jasmine blossoms. Appearance

Shape and Size: High-quality jasmine pearls are tightly hand-rolled into small, uniform balls. Each pearl should be compact, indicating skilled craftsmanship.

Colour: Look for a mix of green and silvery-white hues. The white tips suggest tender, young tea leaves, which are typically of higher quality.

2. Aroma

Dry Pearls: Smell the dry pearls before brewing. They should have a natural, floral jasmine fragrance without any artificial or overpowering scent.

After Steeping: Once brewed, the jasmine aroma should feel balanced and not overpower the tea’s natural green or white tea notes. Artificially scented teas may smell overly sweet or cloying.

3. Brewing Process

Unfurling: Watch how the pearls unfurl during brewing. High-quality jasmine pearls will slowly open into whole, intact leaves, often revealing two leaves and a bud—a sign of fine plucking.

Water Clarity: The tea liquor should be clear and light golden-green, without any murkiness or residue.

You can follow this Jasmine Pearl brewing instruction as a guideline and may adjust to your preference.

Jasmine Pearl Tea Brewing Instruction

4.
